What “fresh” should tell you

Freshness should connect to a date. Ask when the eggs were laid or collected and look for the best-before information that applies to the sale. Official Cyprus consumer information states that the minimum-durability date is no more than 28 days after laying for packaged eggs.

Colour and size do not prove quality. Brown, white or cream shells can all be good eggs, and a small flock may naturally produce mixed sizes. “Village eggs” is not a substitute for the producer details and marketing information required for the way the eggs are being sold.

Check the eggs before accepting them

  • Shells should be intact. Do not accept cracked or leaking eggs.
  • Eggs should be clean and dry, without an unusual smell.
  • The carton or display should provide the information required for that type of sale.
  • Ask how the eggs were stored and how long they were in transport.
  • Use a clean carton and keep eggs out of direct sun during the journey home.

Direct does not mean unregulated

Cyprus Department of Agriculture guidance explains that egg producers and packing centres have legal duties, and that direct sales can be allowed in defined circumstances. It also describes special local-market provisions for producers with fewer than 50 hens who declare the activity and receive permission.

Those details matter to sellers. As a buyer, you do not need to interpret every rule at handover, but you should expect a seller to know which requirements apply to them and to provide honest information about origin, laying date, farming method and storage.

Get them home without undoing the careful part

European hygiene rules say eggs should be kept clean, dry, protected from shocks, away from strong odours and out of direct sunshine. Cyprus consumer guidance recommends refrigeration after purchase.

Keep eggs in their carton in the main body of the fridge, where the temperature is steadier than in the door. Avoid washing eggs before storage, because moisture and handling can damage their natural protection. If an egg is cracked during transport, discard it rather than storing it for later.
